Over 85% of Sangiovese grapes grown in cordon with spur pruning vineyards planted in 2009 and 2011. About 10% of Longanesi grapes grown in cordon with spur pruning vineyards planted in 2009. By hand harvest into 25 and 30 Kg crates.
De-stemming and pressing. Ten days of fermentation with selected yeasts at controlled temperature. Racking at the end of fermentation and soft pressing of the marcs, kept separate.
Ageing : 24 months in durmast tonneaux.

This wine has the organoleptic characteristics of an authentic Sangiovese Superiore, with a well ripe but compact and crisp fruit. Pungent freshness with vigorous but elegant tannins.
Alcohol content: 14%
Ideal with red meat, stew and roasts. Fiorentina beef steak and grilled meat in general.
