Uve Sangiovese da impianti a cordone speronato del 2009 e 2011 per circa l’85%.
Uve Longanesi impianto a cordone speronato del 2009 per circa il 10%. Altre Uve a bacca nera del 2009 per circa il 5%.
Vendemmia manuale in cassette da 25 e 30 Kg.
De-stemming and pressing. Ten days of fermentation with selected yeasts at controlled temperature. Racking at the end of fermentation and soft pressing of the marcs, kept separate.
Ageing : 24 months in durmast tonneaux.
Ageing in the bottle before the release on the market: 5 months
This wine has the organoleptic characteristics of an authentic Sangiovese Superiore, with a well ripe but compact and crisp fruit. Pungent freshness with vigorous but elegant tannins.
Alcohol content: 14,5%
Ideal with red meat, stew and roasts. Fiorentina beef steak and grilled meat in general.
